Tomato Vegetable Soup

This is a catchall soup that I often use to get rid of soft vegetables. It's pretty rule-free and these amounts are only a guide. I just keep tossing stuff into the pot until I either get tired or run out. Season according to your preference. A dash of cayenne when serving gives it a nice little kick.

4 cups chicken, turkey, or vegetable stock
1 can diced tomatoes
1 onion, chopped
1-2 stalks celery, chopped
1-2 sweet peppers, chopped
any other chopped vegetables that you'd like to use up: spinach, kale, carrots, potatoes, peas, beans, etc.
dried pasta or barley or even leftover rice (optional)
cooked chicken or turkey, chopped or shredded (optional)

1.  Throw everything into a large pot on medium-high heat.
2.  Season with vegeta or salt and pepper. Add italian seasoning to taste.
3. Simmer for 30 minutes or more.
4. Enjoy!
