Chocolate Peanut Butter Cookies

    1 cup butter
    1 cup sugar, plus 1/2 cup sugar for rolling
    1 cup dark brown sugar
    2 eggs
    2 cups peanut butter {chunky or smooth}
    1 teaspoon vanilla extract
    1 teaspoon baking soda
    2 1/2 cups flour
    48 Hershey Kisses

Cream together the butter and sugars until light and fluffy. Add eggs one at a time, mix well after each addition. Add peanut butter and vanilla extract.


In a separate bowl mix together flour and baking soda. Gradually add to peanut butter mixture, mixing till texture is consistent throughout the dough.


Preheat oven to 350 degrees and lightly grease a cookie sheet. Roll dough into 1-in. round balls and roll into sugar to coat. Place 1-in. to 2-in. apart on cookie sheet and lightly press down on top of round dough to flatten slightly.


Bake for 12 minutes. After cookies are done and while they are still hot place a Hershey's Kiss in the middle of each cookie. Cool on a wire rack for 5 minutes. Best if served warm while chocolate is melted.


Yields: 4 dozen cookies.
