Orange Marmalade Baked Tofu

Makes 10 slices

  • 12 oz. (350 gm) package of extra-firm tofu (1 lb. would also be fine, but tofu isn't sold that way here)
  • ½ cup soy sauce (gluten-free)
  • 3 tbsp. sugar-free orange marmalade
  • 2 tsp. minced garlic
  • 1 tsp. sesame oil
  • ½ tsp. ground ginger
  • Cooking spray

  1. Cut block of tofu into ½" wide slices.
  2. Mix soy sauce, marmalade, garlic, oil, and ginger in a wide-bottomed bowl.
  3. Lay tofu slices in the bowl and marinade for about 30 minutes, turning and moving the slices periodically so each one gets soaked on both sides.
  4. Spray a cookie sheet with cooking spray.
  5. Lay slices on the tray and cook in a 350° F oven for a total of 30 minutes , turning slices over at the 15-minute mark.
  6. Remove from cooking sheet.  Delicious hot or cold!

For Weight Watchers: Your point value will depend on how many slices you make.  If you have 10 slices of approximately 1.5 oz. and although you do not use up all the marinade, I would suggest this count to be on the safe side: 1.5 points per slice on the Points plan and 2 points per slice on the PointsPlus plan.

However, there's a complication if you use the Points plan.  One tbsp. of marmalade is 0 points on the Points plan. This means that Points plan people theoretically don't have to count the marmalade.  However, if you were to eat all the tofu in one day, the 3 tbsp. of marmalade would have to count for something, perhaps .25 point per slice.
