Paneer Pakoda


For the batter

  • Gram Flour / Besan - 1 cup
  • Turmeric Powder - 1/4 teaspoon
  • Baking Soda - a pinch
  • Salt - to taste, 1 teaspoon
  • Red Chili Powder - 1/2 teaspoon
  • Water - to make a smooth batter of pouring consistency (around 1-2cups)

For the filling

  • Garlic Cloves - 10, peeled
  • Coriander / Cilantro leaves - 3 tablespoons, chopped
  • Green Chili - 1-2, roughly chopped
  • Salt - 1/4 teaspoon or less

Other ingredients

  • Cottage Cheese - 200 grams
  • Cornflakes - 1/2 cup, crushed
  • Oil - to deep fry

Method -

I. Make the coriander-garlic filling

  1. In a pan, heat 1 teaspoon oil
  2. Add the peeled garlic cloves and sauté for 1 minute
  3. Let it cool & add it to the blender
  4. Add green chilli, coriander leaves & a pinch of salt
  5. Add a few drops of water (I added about 2 teaspoons)
  6. Grind / Mix / Blend to a smooth paste & keep aside

II. Make the batter

  1. In a large mixing bowl, add the flour, chili powder, salt, baking soda, turmeric powder & mix well
  2. Slowly, add water. 1 cup at a time. 

III. Preparing the Paneer / Cottage Cheese

  1. Cut the cottage cheese / paneer into 2 inch long and 1/2 inch thick strips. (or any size you are comfortable with. But this works best and looks good too)
  2. Very gently, cut each strip vertically into half, leaving one edge intact.
  3. Stuff the garlic-coriander filling into the slit of each cottage cheese/paneer strip.

IV. Preparing the cornflakes

If the cornflakes are not crushed, crush them with your hand or use a rolling pin.

V. Final Step: Deep Frying

  1. Dip each finger into the prepared batter
  2. Roll into the crushed cornflakes
  3. Gently drop into hot oil
  4. Fry on both sides on medium heat until golden brown and crisp. (takes about 4 minutes)
  5. Remove on a tissue paper

VI. Serve with ketchup or any of your favorite dips (Mint chutney, white sauce, onion-tomato sauce, tamarind-dates chutney etc.) 


  • If you are a VEGAN, substitute Cottage Cheese for Silken Tofu
  • You can prepare a batter of your choice. For example, instead of gram flour, use All purpose flour & pepper.
  • If you make a slightly thicker batter, dip them & shallow fry them for a less fattening snack. 



  1. Prepare the batter as per Step II
  2. Cut the cottage cheese/paneer in thin stripes (or any shape)
  3. Dip them in the batter & deep fry
    *you can even marinate the paneer in yogurt & spices for half hour if you want
