Lightly baked cake. Cake MAY be a bit gummy

TOFU

(SILKEN TOFU)

1/4 cup of pureed tofu

(around 50 grams)

Binding

Recipe calls for many eggs (quiche, custard etc)

To note: Tofu doesn’t become fluffly like eggs when beaten, but the results are similar

- Rich, dense & moist cake

- eggy dishes like quiche, custard come out well

3 tablespoon pureed Tofu + 2 teaspoon Cornstarch

Binding

Good for quiche, custard, pie etc.

Similar to eggy custards!

Flaxseed Powder

1 teaspoon flaxseed pwd + 1/4 cup (50ml) water

OR

1 tablespoon  whole flaxseeds – blend to make a powder; add 50 ml water & blend for 2 minutes to have a thick egg-like consistency of mixture

Binding, Making the dish fluffy

Flaxseed has a nutty flavor and works best when making dark colored dishes like waffle, pancakes, BREADS, oatmeal cookies etc.

 

Dense & heavy breads

Vinegar + Baking Soda

1 teaspoon baking soda + 1 tablespoon vinegar

(white vinegar or apple cider vinegar)

Binding, Light & Fluffy, Rising

Any soft cakes, cupcakes or quick breads (non yeasted)

Light & fluffy cakes. Can’t even tell there’s no egg!

1 tablespoon white Vinegar + 1 tbsp water + 1 teaspoon baking powder. Mix well

1/2 cup (100ml) per egg

NOTE: Reduce amount of liquid suitably.

Substitite the liquid required in the recipe wholly by the buttermilk
