Potato Curry

Prep Time: 5 min
Cook Time: 10 min
Serves: 4 cups

4 medium boiled potatoes (mashed roughly)
2 tomatoes; cut into cubes
3 Green Chilies; finely chopped
1 tsp ginger paste
2 tsp Mustard Seeds / Raai
2 tsp Asafoetida / Hing
2 tsp turmeric / haldi powder
2 tsp Red Chili Powder
2 tsp Coriander Powder (Dhania powder) {Roast coriander seeds & powder finely} (optional)
2-3 tsp SALT (more or less as per your taste)

1. Heat oil on a kadai / pan
2. When the oil is hot, add the mustard seeds & Asafoetida.
3. When mustard seeds start to burst, add the turmeric / haldi powder, red chili powder, coriander / dhania powder, 2 tsp ginger paste & mix well.
4. Then add the green chilies & tomato & mix well.
5. Add SALT and sauté for about 10 minutes. (until the oil starts to come out.)
6. When the tomatoes have reduced to half, add the mashed potatoes and mix well.
7. Add enough water to cover the whole mixture and boil for 2-3 minutes.
8. Garnish with some coriander / celery / parsley leaves & enjoy with Roti (Tortilla), Rice, Puris (Fried Tortilla), bread, or just have it like that

You can add a dash of garlic.
If you want to use onions, fry them until golden brown and then add the tomatoes
