Toasted Coconut & Toffee Almond Flour Cookies

Temperature: 375°
Makes about 1 dozen cookies

1 ½ cups (6 oz) Bob’s Red Mill Almond Meal/Flour
¼ cup of salted butter, room temperature
¼ cup of sugar
1 egg
¼ tsp salt
½ tsp Vanilla
¼ tsp of baking soda
¼ cup of toffee chips/pieces
1/3 cup sweetened coconut flakes

Preheat the oven to 375° and cover a cookie sheet with parchment paper

In a medium bowl, sift Almond Meal/Flour. Set aside

In large bowl, cream sugar and butter. Gradually add egg to sugar and butter mixture. Add in vanilla, salt and baking soda.

Add almond flour/meal and mix well. Fold in toffee chips. Roll into 1 to 1 ½ inch balls. Lightly press down on to parchment paper. Sprinkle sweetened coconut flakes on top and bake for 11 to 12 minutes until a light brown.

Remove cookies from oven, but do not remove from pan until completely cooled.
