Sausage, Peas & Fresh Cherry Tomatoes

Ingredients  -  serves 4
1 Tbsp Olive Oil
2 Italian sausage, removed from casings and crumbled
2 garlic clove, thinly sliced
1 cup frozen peas
1 Tbsp fresh basil, chopped
8 ounces, pasta
1 cup fresh cherry tomatoes, quartered
Crushed red pepper to taste

Bring a large pot of salted water to a boil. Stir the pasta into the water. Cover the pot and return to boiling, stirring occasionally until pasta is tender but dente.

Heat olive oil in a pan over medium high heat. Add the sausage to the skillet and cook until brown. Add the garlic, and crushed red pepper. Cook until slightly brown and fragrant.

Season with salt and pepper.

Add the peas and a small amount of pasta water to the sausage mixture and cook for about three minutes. Toss in the tomatoes at the last minute.

When the pasta is cooked add it to the pan and mix. Top with a
drizzle of olive oil and some fresh chopped basil.
