Roasted Tomatoes, Sausage and Veggies

Ingredients  -  serves 4
1 lb pasta
3 Tbsp olive oil
2 garlic cloves, minced
8 oz mushrooms, thinly sliced
1 bell pepper, chopped
4 roasted tomatoes, chopped
2 large Italian sausages, casings removed and crumbled.
Crushed red pepper to taste

1/2 cup grated Parmesan cheese

Bring a large pot of salted water to a boil. Stir the pasta into the water. Cover the pot and return to, stirring occasionally until pasta is tender but dente.

In the meantime heat olive oil in a large pan, add sausage and cook until browned. Add garlic and crushed red pepper, cook until soft. Add the bell pepper and mushrooms and sauté until softened. Mix in the roasted tomatoes and season with salt and pepper.

Drain the pasta, reserving some cooking liquid.

Pour the pasta and reserved liquid into the pan with the veggies and toss to coat.

Serve pasta with grated Parmesan cheese.
