Olive Oil & Cherry Tomatoes

Ingredients  -  serves 4
4 Tbsp Olive Oil
2 - 3 garlic cloves, thinly sliced
Crushed red pepper to taste
2 cups cherry tomatoes
Fresh basil, chopped
Salt to taste
1 lb fettuccine
Grated Parmesan cheese for serving

Bring a large pot of salted water to a boil. Stir the pasta into the water. Cover the pot and return to boiling, stirring occasionally until pasta is tender but firm...al dente.

In the meantime heat the olive oil, crushed red pepper and garlic together in a medium pan, until garlic becomes fragrant. Add the tomatoes and cook about 1 minute. Add salt to taste and remove from heat.

Drain the pasta, add it to the pan and toss with tomatoes, add the basil and place back on the heat. Cook about one minute to warm it back up. Remove from heat and serve with some grated Parmesan cheese.
