Thomas Crosby Muffins - Cheese (and Bacon) Breakfast Muffins

1 cup flour
2 tsp baking powder
½ tsp baking soda (bicarb of soda)
½ tsp salt
2 tbsp sugar
2 tbsp margarine or soft butter
¾ cup rolled oats (normal oats)
¾ cup grated cheddar cheese
4 slices crispy bacon, crumbled (optional)
1 beaten egg
¾ cup buttermilk (sour cream)

Method:

Preheat oven to 200 C (425 F)

In a bowl, mix together the flour, baking powder, baking soda, salt and sugar.

Rub in the soft butter/ margarine into this.

Mix in the rest of the ingredients and stir well into a thick batter.

Drop heaped tablespoons of the mixture into a muffin tray.

Pop into the hot oven and bake for about 15 minutes or so, until well risen and golden.

Serve warm with butter. Makes about 12 – 15 based on your muffin tray.
