Spiced Paneer with Spinach, Tomatoes and Potatoes

400g pack of paneer, cubed
1 tbsp olive oil
3 garlic cloves, chopped
2 large tomatoes, chopped
1 large potato, chopped and boiled till just tender
1 large bunch of spinach, washed and torn into bite sized pieces
Salt to taste

Spice Mix:


1 tsp garam masala

1 tsp ground cumin
1 tsp ground coriander
1/2 tsp ground turmeric
1/2 tsp (or to taste) hot chilli powder

Method:

 
Heat the oil in a heavy pot, and add the garlic. Saute for about 1 minute, then add the tomatoes and the spice mix. Cook for about 3 - 5 minutes, until the tomatoes are mushy. Add salt to taste.


Add the cubed paneer and potatoes, and stir until they are well coated with the spices.


Add the spinach, a little at a time, until it is all wilted and cooked through. Stir gently until everything is heated through.


Serve with rice, roti or naan.
