Okra with Tomatoes

(Adapted from Jasleen Dhamija's 'The Joy of Vegetarian Cooking')

1 tbsp oil
1 large onion, finely chopped
3 cloves garlic, crushed
250 - 300g fresh okra, sliced into rounds
1 tsp ground coriander
1/2 tsp ground cumin
1/2 tsp ground pepper
1 tsp salt
2 large tomatoes, diced
1 tbsp lime or lemon juice
Handful fresh coriander, chopped

Method:

Heat the oil and saute the onion, until lightly coloured.

Add the garlic and saute for another minute.

Add the tomatoes and spices and cook till soft.

Add the okra to the dish, and on a low flame, simmer for roughly 5 - 7 minutes till the okra is tender. Sprinkle over the lime/ lemon juice. 

Garnish with the fresh coriander and serve hot with rice, roti or naan.
