Garam Masala - Recipe

2 star anise
3 pods black cardamom, seeds only
½ tbsp peppercorns
1 tbsp cassia bark
½ tbsp cloves
1 tsp green cardamoms
1 tsp mace
1 ½ tbsp whole coriander seeds
1 tbsp cumin seeds 1 tsp nutmeg, grated
3 bay leaves

Method:

Place all the spices except the star anise, black cardamom seeds and grated nutmeg in a heavy pan. Toast for about 30 – 45 seconds, stirring constantly on a fairly high heat until fragrant. Remove to a bowl and let cool.

Meanwhile, add the black cardamom seeds the star anise into the same pan, and toast for about 1 minute on the same heat, again stirring constantly. Remove to the bowl of spices and let cool.

Add the spices to a spice grinder or blender and add the grated nutmeg.

Blend to a fine powder.


Store away from direct sunlight for the best flavour.
