Corn Sausage Casserole

Serves 4-6

Casserole:

1 pound sweet or hot sausage out of the casing

4 large eggs, lightly beaten

1 can cream-style corn

1 can corn kernels, drained, or 1 cup fresh corn on the cob

1 cup breadcrumbs

salt and pepper, to taste

For topping:

1/4 cup breadcrumbs 

2 tablespoons melted butter 

Preheat the oven to 350 degrees F. Coat a 6 X 10 rectangular glass dish with cooking spray.

In a large skillet over medium heat, saute sausage until browned and crisp, about 7-8 minutes. Place in a large bowl, and mix with remaining ingredients. Pour into the glass dish. In a small bowl, toss together 1/4 cup breadcrumbs with melted butter, and sprinkle evenly over the top of the casserole.

Bake for 45-50 minutes, or until golden brown and bubbly.
