Steak Fajitas - Finding Joy in My Kitchen
1 lb. steak, cut into strips
1/8 C beef broth
4 medium bell peppers, sliced thin
8 oz mushrooms (optional)
2 garlic cloves, minced
1 T olive oil
Cheddar cheese, shredded
Place steak, broth, fajita seasoning in a crockpot. Cover and cook on low for 6-8 hours,
or on high for 4ish hours until meat is tender and internal temperature is hot enough.
When meat is ready, saute sliced peppers in a bit of olive oil.
Add in mushrooms and galrlic and saute until mushrooms are tender.
Serve steak on wrapped in a tortilla with sauteed veggies.
Top with cheese.
