Refrigerator Pickles

Mom's Refrigerator Pickles - Finding Joy in My Kitchen


3 C sugar

3 C vinegar

1/4 C pickling salt (use less if table salt -- about 3 T)

1/2 tsp. tumeric

1 tsp. celery seed

1 tsp. mustard seed

2 onions, sliced

1 gallon sliced cucumbers


Mix all the ingredients together in a very large bowl.  


Then, stir in the cucumbers.  


Allow them to "pickle" for just a few minutes, and then transfer them to jars.  


Store in the refrigerator.  


This recipe is easily halved or quartered if you don't have very many cucumbers!
