Cheesy Crackers

Whole Wheat Cheesy Crackers - Finding Joy in My Kitchen

1 1/2 C whole wheat flour
1/2 C white wheat flour
1/2 tsp. salt
2 T olive oil
2/3 C water
1 C extra sharp cheddar cheese, grated and at room temperature
sea salt {for garnish}   


Combine the dry ingredients in a large bowl {or in the bowl of your mixer}.  


Add in the water and olive oil.  Stir to mix.  


Then, add in the cheese, making sure it's close to room temperature.  


Knead the dough for a few minutes {I used my mixer for 5ish minutes} 

until the dough is smooth and well mixed.  


Roll the dough onto a cookie sheet {I used two cookie sheets} as thin as you can... around 1/8th inch thick. 


Use a pizza cutter to cut the dough into crackers about 1 inch by 1 inch.  

Then, prick each crackers with a fork.  Sprinkle with sea salt as desired.     


Bake at 375 for 15-20 minutes, until crackers are lightly browned.  

Watch crackers carefully, as they will burn relatively quickly, 

especially as they approach the end of their baking time.  


Crackers will pop right off the tray with very little effort when cooked properly.
