Mediterranean Meatball Gyro Sandwiches
What you need:
For the Tzatziki Sauce:
- 1 cup Greek yogurt
- 1/4 cup grated cucumber
- 1 tsp. minced garlic cloves
- 1 tsp. EVOO
- 1 Tbsp. fresh dill
- 1/2 tsp. sea salt
- 1/4 tsp. black pepper
- 1 Tbsp. fresh lemon juice
For the Meatballs:
- 1 lb. ground beef
- 1/4 cup Italian breadcrumbs
- 1 large egg
- 2 Tbsp. Italian parsley, chopped
- 1 Tbsp. minced garlic cloves
- 1/2 tsp. ground cumin
- 1/2 tsp. sea salt
- 1/4 tsp. black pepper
For the Cucumber Salsa:
- 1 cup diced cucumbers
- 1 cup diced tomatoes
- 1/2 cup finely diced red onion
- 1 Tbsp. Italian parsley, chopped
- Salt and pepper
For the Sandwiches:
- 4 flatbreads
Directions:
- For the tzatziki sauce: mix together all ingredients. Cover and refrigerate.
- For the meatballs: Mix together all ingredients.
- Form into meatballs and place on a foil-lined, lightly greased baking sheet.
- Bake in a preheated 425 degree oven for about 10 to 15 minutes or until no longer pink inside.
- For the salsa: While the meatballs cook, mix together all ingredients.
- Heat the flatbreads according to package directions.
- To assemble: Place four or so meatballs down the center of each flatbread. Top with Tzatziki sauce and top with cucumber salsa.
