Italian Noodle Casserole

What you need:

  • 8 oz. penne or ziti, cooked al dente
  • 1 lb. ground beef
  • 1/2 medium yellow onion, diced
  • Salt and pepper, to taste
  • 1 large zucchini, diced
  • 1 to 2 cloves minced garlic
  • 2 cans (15 oz. each) tomato sauce
  • 1 tsp. dried Italian seasoning
  • 1 cup plain Greek yogurt
  • 3 oz. cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup shredded parmesan cheese


  1. In a large skillet over medium heat, cook and crumble ground beef with onion and salt and pepper. Drain, if needed.
  2. Add zucchini and garlic and saute for about 5 minutes.
  3. Stir in tomato sauce and Italian seasoning and bring to a simmer.
  4. In a bowl (or the pot it was cooked in), stir together pasta, Greek yogurt, and cream cheese until smooth.
  5. Pour pasta into a greased 9x13-inch casserole dish.
  6. Top with an even layer of the meat mixture and then top with cheddar and Parmesan.
  7. Bake in a preheated 450 degree oven for 15 to 20 minutes or until heated through and cheese has melted.
