Creamy Spinach & Sausage Pasta
What you need:
- Smoked sausage, sliced
- 1 Tbsp. olive oil
- 1 medium onion, diced
- 1 can (14 oz.) diced tomatoes with chillies
- 2 cups chicken broth
- 8 oz. pasta
- 3 cups fresh spinach
- 1 cup shredded monterey jack cheese
- Green onions, diced, for serving
Directions:
- Add olive oil to a large deep skillet. Add sausage and saute over medium heat for about 5 minutes.
- Add onion to skillet and cook for another 5 minutes.
- Add tomatoes and chicken broth and stir to combine. Scrape off any brown bits from the bottom of the pan.
- Add uncooked pasta to skillet and make sure it is under the liquid completely.
- Cover and bring to a boil. Once boiling, reduce heat to low and cook for about 10 minutes or until pasta is tender. Make sure you stir on occasion to prevent sticking.
- Stir in spinach, 1 cup at a time, until wilted.
- Turn of heat and top with shredded cheese and cover to melt.
- Top with green onions and serve immediately.
