The Best Coffee Cake Ever
What you need:
For the cake:
- 1 1/2 sticks unsalted butter, softened
- 2 cups scant granulated sugar
- 3 cups all purpose flour
- 4 tsp. baking powder
- 1 tsp. salt
- 1 1/4 cups whole milk
- 3 egg whites, beaten until stiff
For the topping:
- 1 1/2 sticks unsalted butter, softened
- 3/4 cup all purpose flour
- 1 1/2 cups brown sugar
- 2 Tbsp. cinnamon
- 1 1/2 cups chopped pecans
Directions:
- For the cake: Sift together flour, baking powder, and salt.
- Beat butter and sugar together until light and fluffy.
- Alternate adding flour mixture and milk (starting and ending with flour). Mix until just combined.
- Fold in stiff egg whites with a rubber spatula.
- Pour into a greased 9x13-inch baking dish.
- For the topping: combine all ingredients and cut with a fork or pastry cutter until crumbly.
- Sprinkle topping over the cake batter.
- Bake in a preheated 350 degree oven for 40 to 45 minutes or until a toothpick inserted into the center comes out clean.
