The Junkyard Special Sandwich

What you need:

    • 4 sub rolls
    • 8 slices prosciutto
    • 8 to 16 slices deli turkey
    • 4 slices Provolone, cut in half
    • 8 oz. fresh mozzarella, thinly sliced
    • 1/2 cup roasted red peppers, drained and thinly sliced
    • 4 cups fresh baby spinach
    • Dried Italian seasoning
    • 4 fresh basil leaves, chopped
    • 4 tsp. olive oil
    • 4 tsp. red wine vinegar

Directions:

    1. In a small skillet, add 1 tsp. olive oil and toss spinach over medium-high heat until wilted.
    2. Arrange sub rolls separated into halves on a foil-lined baking sheet.
    3. Top each half of sub rolls with a piece of prosciutto and turkey.
    4. Add 1/2 slice of provolone to each half of sub rolls.
    5. Then evenly distribute spinach and roasted red peppers on the rolls.
    6. Sprinkle with Italian season then drizzle with 1/2 tsp. olive oil and 1/2 tsp. vinegar to each one.
    7. Top each roll with sliced mozzarella.
    8. Bake in a preheated 350 degree oven for 10 minutes or until cheese melts and bread is lightly toasted.
    9. Remove from oven and match bottoms and tops together. Serve.
