The Junkyard Special Sandwich
What you need:
- 4 sub rolls
- 8 slices prosciutto
- 8 to 16 slices deli turkey
- 4 slices Provolone, cut in half
- 8 oz. fresh mozzarella, thinly sliced
- 1/2 cup roasted red peppers, drained and thinly sliced
- 4 cups fresh baby spinach
- Dried Italian seasoning
- 4 fresh basil leaves, chopped
- 4 tsp. olive oil
- 4 tsp. red wine vinegar
Directions:
- In a small skillet, add 1 tsp. olive oil and toss spinach over medium-high heat until wilted.
- Arrange sub rolls separated into halves on a foil-lined baking sheet.
- Top each half of sub rolls with a piece of prosciutto and turkey.
- Add 1/2 slice of provolone to each half of sub rolls.
- Then evenly distribute spinach and roasted red peppers on the rolls.
- Sprinkle with Italian season then drizzle with 1/2 tsp. olive oil and 1/2 tsp. vinegar to each one.
- Top each roll with sliced mozzarella.
- Bake in a preheated 350 degree oven for 10 minutes or until cheese melts and bread is lightly toasted.
- Remove from oven and match bottoms and tops together. Serve.
