Enchilada Burgers

What you need:

    • 1 1/2 to 2 lb. ground beef (80/20)
    • Salt and pepper, to taste
    • 2 tsp. taco seasoning
    • 4 to 6 slices Monterey Jack cheese
    • 1/2 cup enchilada sauce
    • 4 to 6 hamburger buns
    • 1/2 cup pico de gallo
    • 1 Tbsp. fresh cilantro, chopped
    • Lettuce

Directions:

    1. Form ground beef into 4 to 6 patties and season with salt, pepper, and taco seasoning.
    2. Cook patties in a skillet or on a grill, flipping once, and placing cheese on top during the last few minutes of cooking.
    3. Assemble burger by placing a piece of lettuce on the bottom bun, then top with burger, a small amount of enchilada sauce, pico de gallo, and cilantro, followed by the top bun.
