Bacon Brown Sugar Pork Loin

What you need:

    • 1 pork tenderloin (about 1.5 lb)
    • 3 Tbsp. brown sugar
    • 2 tsp. salt
    • 1/2 tsp. smoked paprika
    • 1/4 tsp. cayenne
    • 4 to 6 slices bacon
    • 1 Tbsp. canola oil
    • 1/4 cup Major Grey's Chutney (or similar chutney)
    • 2 Tbsp. whole grain mustard

Directions:

    1. Trim connective tissue from the pork tenderloin. Pat dry and set aside.
    2. In a small bowl, mix together brown sugar, salt, paprika, and cayenne. Rub mixture onto the tenderloin.
    3. Then wrap the tenderloin with bacon, securing with toothpicks, if necessary.
    4. In a large cast iron or ovenproof skillet, heat oil over medium-high heat.
    5. Add tenderloin and sear on each side until caramel brown, about 6 to 8 minutes each side.
    6. Meanwhile, in another small bowl, mix together chutney and mustard. Brush over the pork tenderloin.
    7. Move an oven rack to the middle of your oven and preheat to 350 degrees.
    8. Place skillet into the oven and bake until done, about 10 to 14 minutes.
    9. Remove from oven and loosely tent with aluminum foil for 10 to 15 minutes to allow pork to continue cooking.
    10. Slice after removing toothpicks and serve with any leftover chutney, if desired.
