Bacon Brown Sugar Pork Loin
What you need:
- 1 pork tenderloin (about 1.5 lb)
- 3 Tbsp. brown sugar
- 2 tsp. salt
- 1/2 tsp. smoked paprika
- 1/4 tsp. cayenne
- 4 to 6 slices bacon
- 1 Tbsp. canola oil
- 1/4 cup Major Grey's Chutney (or similar chutney)
- 2 Tbsp. whole grain mustard
Directions:
- Trim connective tissue from the pork tenderloin. Pat dry and set aside.
- In a small bowl, mix together brown sugar, salt, paprika, and cayenne. Rub mixture onto the tenderloin.
- Then wrap the tenderloin with bacon, securing with toothpicks, if necessary.
- In a large cast iron or ovenproof skillet, heat oil over medium-high heat.
- Add tenderloin and sear on each side until caramel brown, about 6 to 8 minutes each side.
- Meanwhile, in another small bowl, mix together chutney and mustard. Brush over the pork tenderloin.
- Move an oven rack to the middle of your oven and preheat to 350 degrees.
- Place skillet into the oven and bake until done, about 10 to 14 minutes.
- Remove from oven and loosely tent with aluminum foil for 10 to 15 minutes to allow pork to continue cooking.
- Slice after removing toothpicks and serve with any leftover chutney, if desired.
