Junior Mint Cupcakes
What you need:
For the cupcakes:
- 1 box devil's food cake mix
- 3 eggs
- 1 cup milk
- 1/2 cup vegetable oil
- 2 tsp. peppermint extract
For the filling:
- 2/3 cup powdered sugar
- 5 Tbsp. heavy cream
- 1 1/2 tsp. peppermint extract
For the frosting:
- 5 cups powdered sugar
- 1/4 cup unsalted butter, at room temperature
- 3/4 cup heavy cream
- 2 tsp. peppermint extract
- At least 20 Junior Mints candies
Directions:
- Prepare a muffin pan with cupcake liners and set aside.
- For the cupcakes: in a large bowl, whisk together eggs, milk, vegetable oil, and peppermint extract. Add cake mix and stir with a rubber spatula until just combined.
- Scoop batter into cupcake liners filling about 3/4 full.
- Bake in a preheated 350 degree oven for about 16 minutes or until a toothpick inserted in the middle comes out clean.
- Remove from oven and let cool for 5 minutes in pan and then remove from pan to finish cooling on a wire rack.
- For the filling: in a small bowl, mix together powdered sugar, heavy cream, and peppermint extract until completely combined.
- When cupcakes have cooled, cut out the center about an inch deep and set aside.
- Fill each cupcake hole with filling and top with the little pieces you removed.
- For the frosting: in a large mixing bowl, beat butter until creamy.
- Add heavy cream and powdered sugar and mix on low speed until it is combined and fluffy and smooth. Add peppermint extract and mix to combine.
- Add frosting to a piping bag fitted with a tip of your choice. Frost cupcakes, then top with a Junior Mint candy.
