Junior Mint Cupcakes

What you need:

For the cupcakes:

    • 1 box devil's food cake mix
    • 3 eggs
    • 1 cup milk
    • 1/2 cup vegetable oil
    • 2 tsp. peppermint extract

For the filling:

    • 2/3 cup powdered sugar
    • 5 Tbsp. heavy cream
    • 1 1/2 tsp. peppermint extract

For the frosting:

    • 5 cups powdered sugar
    • 1/4 cup unsalted butter, at room temperature
    • 3/4 cup heavy cream
    • 2 tsp. peppermint extract
    • At least 20 Junior Mints candies

Directions:

    1. Prepare a muffin pan with cupcake liners and set aside.
    2. For the cupcakes: in a large bowl, whisk together eggs, milk, vegetable oil, and peppermint extract. Add cake mix and stir with a rubber spatula until just combined.
    3. Scoop batter into cupcake liners filling about 3/4 full.
    4. Bake in a preheated 350 degree oven for about 16 minutes or until a toothpick inserted in the middle comes out clean.
    5. Remove from oven and let cool for 5 minutes in pan and then remove from pan to finish cooling on a wire rack.
    6. For the filling: in a small bowl, mix together powdered sugar, heavy cream, and peppermint extract until completely combined.
    7. When cupcakes have cooled, cut out the center about an inch deep and set aside.
    8. Fill each cupcake hole with filling and top with the little pieces you removed.
    9. For the frosting: in a large mixing bowl, beat butter until creamy.
    10. Add heavy cream and powdered sugar and mix on low speed until it is combined and fluffy and smooth. Add peppermint extract and mix to combine.
    11. Add frosting to a piping bag fitted with a tip of your choice. Frost cupcakes, then top with a Junior Mint candy.
