Pan-Roasted Chicken with Lemon-Garlic Green Beans and Potatoes
What you need:
- 6 Tbsp. olive oil
- 2 lemons, 1 sliced, 1 juiced
- 4 garlic cloves, minced
- 1 tsp. salt
- 1/2 tsp. pepper
- 3/4 lb. fresh green beans
- 8 small red potatoes, quartered
- 4 chicken breasts (I sliced mine in half)
Directions:
- Place 1 Tbsp. olive oil in the bottom of a casserole dish. Add lemon slices to the bottom.
- Mix together oil, lemon juice, garlic, and salt and pepper in a bowl.
- Toss green beans with lemon juice mixture. Remove and place on top of lemon slices.
- Toss potatoes with lemon juice mixture. Remove and place on top of green beans.
- Toss chicken with lemon juice mixture. Remove and place on top of potatoes.
- Pour remaining sauce over chicken.
- Roast at 400* for 50 minutes.
- Remove chicken and roast for another 10 minutes or until potatoes are golden brown with a crispy crust!
