What you need:
- 2 lb. Russet potatoes, peeled, grated, and dried
- 1 tsp. garlic
- 1 tsp. paprika
- 1/4 tsp. cayenne
- Salt and pepper
- 2 tbsp. butter
- 2 tbsp. olive oil
- Toss potatoes with seasonings.
- Add half the butter and half the oil to a pan and heat over medium heat.
- Add potatoes and pack them down tightly.
- Fry for 5 to 7 minutes.
onto a baking sheet and add remaining butter and oil to empty pan. Add
potatoes back to pan, cooked side up, and fry for another 4 to 5
- Serve cut in wedges.
