Daikon Salad

7oz (200g)

1 Tbsp
soy sauce

1 Tbsp
sesame oil

1 Tbsp
lemon juice

1 1/2 tsp

1~2 tsp
roasted and grounded white sesame seeds*

1/4 sheet
nori, cut into thin strips (use scissors)

  1. Prepare Daikon: Peel the daikon and cut it in very thin stripes. Soak them in water for five to ten minutes. Drain well and set aside.

  2. Make Dressing: Combine the soy sauce, sesame oil, lemon juice and sugar in a bowl and mix well.
  3. Add the daikon and the grounded sesame seeds to the dressing bowl and combine until well mixed. Put them on a plate and dress with the nori strips.

Serves 2~4

*If you are using regular white sesame seeds, place sesame seeds in a pan and roast over medium heat until some seeds start popping (I recommend using a lid to prevent the seeds from popping out of the pan.) Cool them down and put them in a Ziplock bag, then crush them using a rolling pin.
