3/4 c panko
3 tsp Tony Chacheres
1/4 tsp salt
1 egg, slightly beaten
2 tbsp flour
2 5 oz cod (or flounder) fillets, preferably wild caught

Preheat oven to 400 degrees. Spray a baking dish with nonstick spray and set aside.
a large shallow bowl or pie dish, mix together the panko, Tony
Chachere's, salt and flour. Set aside. In another small dish place the
beaten egg. You're making an assembly line for the fish sticks.
slice the fish fillets into sticks. Dunk each stick into the egg then
into the breading. Place fish sticks into your prepared dish and lightly
mist with oil.
Bake for 15-18 minutes until crispy. Serve immediately with dipping sauce of your choice!
