Sweet Potato Bun

Ingredients : Dough


(A)

20-30 ml fresh milk

1 1/4 tsp instant yeast

1 egg ( grade B)


(B)

250 gm high protein flour

15 gm milk powder

1/2 tsp salt

35 gm caster sugar

30 gm butter

200 gm sweet potato ( cooked & mashed)


Ingredients: Topping white sesame seed * I used almond flakes


Method:


Mix ingredients A together. Place ingredients B in a mixer with a dough hook attached. Blend till well mixed. Slowly add in ingredients A and blend till a soft dough is formed. Take out the dough and knead till it becomes light and not sticky for about 20 minutes.


Cover the dough with a damp cloth, leave it to rise in a warm place for 40 minutes or until double in size.


Divide dough into 10  equal portions ( 55 g each portion ) Shape into small balls to make buns. Line 5 portions on a pre-greased chiffon baking pan. 2 baking pans fit 10 portions in total. Leave the dough to prove for another 50 minutes or until double in size. 


this recipe can makes 2 loaves of sweet Potato breads )


Brush the buns with egg wash to give a nice sheen. Sprinkle white sesames ( almond flakes ) on the top of the buns. Bake in a preheated oven at 200° C for 20-25 minutes or until golden brown.
