Rich Baked Durian Cheesecake

Base :

175 gm digestive biscuits

75 gm melted butter

 

Fillings:

 

400 gms durian pulps – puree it ( I prefer it not too fine )

 

125 -150gm cream cheese

20 gm castor sugar

3 egg yolks

50gm plain yoghurt

50gm whip cream

1 tbsp corn flour

¼ tsp of salt

 

2.5 egg whites

25 gm castor sugar

 

Preparing the base :

 

Melt 75 gm butter . Crush the digestive biscuits into fine crumbs . Pour the melted butter over the digestive crumbs and mix well. Press into the base of a 9” springform to form the base for the durian cheese fillings . Chill in the freezer for 30 minutes.

 

Preparing the fillings :

 

Beat the cream cheese with 20 gm sugar till light and fluffy . Add in the egg yolks and whisk till well blended. Add in the yoghurt, whip cream, salt and corn flour till well mixed. Add in the durian puree and mix well.

 

Whisk the egg whites till it forms petals at low speed then slowly add in the 25 gm of sugar till soft peaks .  Fold in the whisked whites gently into the durian cheese mixture . Pour into the chilled base and baked at 160º C for 50-60 minutes or till it sets.   Off the oven heat and let it rest in the oven for 1 hour. Take it out of the springform  and chill in the fridge for a few hours before serving

 

* Note:  Best taken the next day. Cuts well with a hot knife.
