SOUP - Cuppa Soup

Home-made Cuppa Soup
My friends all say it's lovely soup.  I think it is too!
Often I either can't be bothered to cook something or I don't have time - you might just call that being lazy!
My soup gets ladelled into mugs which go into the freezer.  When required they go from freezer to microwave.  The easiest quickest way that I know of to get me to eat my vegetables.
 Special Equipment
Wand Liquidiser or a blender
2 cups of orange Lentils, rinsed in cold water
2 good sized Onions
1 Sweet Potato, peeled
1 head of broccoli - also use the stalk
About 3 heaped teaspoons of Marigold Vegetable Stock Powder
About 2 pints of water
Chop everything into bites sized pieces.  Put everything into the pan and bring to the boil.
Simmer for about 20 minutes or until everything is nicely cooked.  Orange Lentils don't take long to cook and you don't need to soak them.
Either add a little cold water or let it cool a little - just in case you splash yourself during the next step it won't burn quite so badly.
Take a wand liquidiser and blend the soup in the pan.  Or use a propper liquidiser but I find that using the wand means less washing up to do at the end.
Ladle into mugs and leave to cool before putting them into the freezer.
