Ginger, Cinnamon and Honey Cookies

Up to 1/4 Cup of Coconut Oil or Butter
1 Egg
1/4 Cup Honey
1/8 Cup Black Molasses
Tiny sprinkling of sugar maybe half an ounce
Up to 3/4 teaspoon Vanilla optional

        1 rounded teaspoon Ground Ginger  or more if you like it hot
        1 rounded teaspoon Cinnamon

1/8 teaspoon Salt
1/2 teaspoon Baking Powder
1 level teaspoon Xanthan Gum

2 Cups Flour / dry ingredients made up as follows:
    1/4 Cup Ground Almonds
    3/4 Cup Plain Flour
    1/2 Cup Potato Starch / Flour
    1/2 Cup Cornflour
(Or just use 2 Cups of your favourite flour)
Oven 160 C about 20 minutes till firm to touch but not hard
I used the top oven for these rather than the fan oven.

Using my cookie mold this makes around 14 good sized cookies or 28 small.

I hope to experiment with different flavours such as chocolate
Also experiment with egg free ... I'll keep you posted ...

100g Green and Black's Chocolate 70 or 80% instead of the Coconut Oil
