Yoghurt (Dahi)

  • 1 litre Milk 
  • 1 table spoon curd (yogurt) 
  1. Heat the milk in a heavy sauce pan to 80oC.
  2. Allow to cool to 40oC.
  3. In a cup take some of this warm milk and add the yoghurt and stir it well.
  4. Place it in a warm place  overnight or for 5-6 hours atleast. During the setting period do not move the container at all. 
  5. Once it is done trasfer the container to refrigerator.
  6. You can alter the cream content for a preferred consistency.
  7. Various flavour additions can be added after the yogurt is made.
  • The process depends on temperature. In colder weather it takes longer to form the yoghurt. You can place the mixture in a thick wrapping of cloth as  insulation to speed up the process during cooler weather.
