Potato Paneer Tots

  • 2 medium sized potatoes
  • 1 cup mashed paneer, Farmer's cheese, cottage cheese or a medium fat soft cheese
  • 1 teaspoon salt, (variable)
  • 1 finely chopped Thai or milder chillie or 1/2 tsp chillie powder
  • 1/4 teaspoon fresh ground black pepper

For batter:
  • 3 tablespoon all purpose flour
  • 5 tablespoons water

  • Oil for frying.

  1. Mix the flour with water and blend into a very smooth batter.
  2. Grate the uncooked potatoes .
  3. Dice the  chillie finely.
  4. Add the potatoes to boiling water and cook until firm about a minute or two
  5. Remove the cooked potatoes from the heat and immediately transfer the potatoes into a colander and add cold water to stop the cooking process. Drain well.
  6. Squeeze excess water from the cool potatoes and add the cheese, salt, pepper and chillie. Mix  and form small croquettes (Approx 2 dozen).
  7. Heat some oil to 180oC (355oF), coat the tots in the batter and immediately deep fry.
  8. Turn during the cooking process to ensure even cooking and fry the croquettes until deep golden brown
  9. Drain the croquettes on kitchen paper  and serve.
