Pork Leg in Black Vinegar 腿肉的黑醋 (Tuǐ Ròu De Hēi Cù)

Ingredients :

  • 1 fore-leg of pork, chopped 
  • 300 g ginger 
  • l 1 rice bowl (175 ml) of Chinese black vinegar 
  • 3 tablespoons sugar 
  • 1 tablespoon dark soya sauce 
  • 1 tablespoon light soya sauce 
  • 3 eggs 
  • 3 cloves garlic, minced 
  • cooking oil

Preparation :

  • Clean pork pieces. Wash and drain.
  • Remove skin of ginger and pound to break open.
  • Hard boil eggs with shells removed.
  • Put ginger in pot, add water to cover ginger. 
  • Boil for 5 minutes. Discard the water and set aside the ginger.

Method :

  1. Heat pot, add 4 tablespoons cooking oil. Add minced garlic, stir until soft.
  2. Add pork pieces and stir for 5 minutes.
  3. Add 3 1/2 rice bowls (~600 ml)  of water, black vinegar, sugar, dark soya sauce, hard boiled eggs and 1/2 teaspoon salt.
  4. Simmer until the pork is soft.
  5. Remove from heat and serve.
