Nam Jim Kao Man Kai (Sauce for Kao Man Kai)

Ingredients:
  • 1 tablespoon yellow bean sauce
  • 1 tablespoon vinegar  
  • 1-2 Thai chili pepper, sliced
  • 1 teaspoonsugar  
  • 1piece ginger
  • 6 garlic cloves
  • 1 teaspoon dark soy sauce
  • 10 sprigs cilantro, chopped
  • 1 tablespoon chicken soup 
Method:  
  1. Peel a piece of ginger, about 5 cm (2 in) long. 
  2. Grind the ginger in mortar with the garlic or blender or julienne the ginger. 
  3. Slice Thai chili pepper and chop the cilantro. 
  4. Combine all ingredients. 
  5. Serve in a small bowl with Kao Man Kai.
