Lechon Liempo (Roast Pork Belly)

  • Pork belly; 30 – 40 cm  (12 -16 in) long
  • Garlic; smashed and diced
  • Salt and pepper to taste
  • Rosemary leaves
  • Sliced tomatoes for garnishing

  1. Rub inner layer of meat with a mixture of salt, pepper, garlic and rosemary leaves. 
  2. Roll meat, and then  tie in sections or skewer.  Place in a roasting pan.
  3. Preheat oven to 205oC (400oF). Bake in oven for about 15 minutes, and then decrease heat to 175oC (350oF).
  4. Bake for about one and a half hours to 2 hours or until meat turns  brown and crisp
  5. Remove pan from oven and transfer to a rack.
  6. Slice in rings and place in a platter. Garnish with the tomatoes.
