Lao Peanut Dipping Sauce

  • 120 ml (1/2 cup) Sugar
  • 1 tsp Salt
  • 1 Tbsp Fish sauce
  • 1 clove Garlic
  • 60 ml (1/4 cup) Peanut butter
  • 1 1/2 Tbsp Lime juice
  • 1 Chillie (or dried crushed chillies) (optional)
  • 3/4 cup Roasted peanuts

  1. In a medium pot caramelize the sugar on medium heat until golden brown
  2. Cautiously add 1 cup hot water (It will boil vigorously)
  3. Boil until the sugar dissolves (cover with a lid for faster results) and let cool 30 minutes
  4. Transfer to a blender and add salt, fish sauce, garlic, peanut butter, lime juice, and pepper and blend 30 seconds
  5. For extra flavor, place roasted peanuts in a frying pan on high heat
  6. Shake and stir constantly 3 minutes and cool for 15 minutes
  7. Coarsely grind the roasted peanuts
  8. Serve in individual sauce bowls and garnish with the chopped roasted peanuts
