Khanom Keng

  • 1 cup Sticky Rice Flour
  • ¾ cup Water
  • ¼ to ½ cup Sugar
  • ¼ cup shredded coconut dried or fresh.
  • 1 Tablespoon Oil
  • Bright Pink food colouring.

  1. Mix sticky rice flour with coconut and sugar.
  2. Add ½ cup water, stirring continuously until the mixture is very thick.
  3. Add the remaining  water and stir until completely and uniformly mixed.
  4. Make a number of banana cups about the size of a cup-cake holder with vertical sides for convenience. Cup-cake papers are a good alternative. If you make the banana leaf holders then allow them to dry before filling.
  5. Grease the inside of each of the holders with a little canola oil.
  6. Pour an amount of the mixture into each holder.
  7. Steam over high heat for 10 to 15 minutes. Remove from heat and let them cool.
  8. Dab a little dot of the bright-pink colour onto the centre of each cake.
