Kansui. (Chinese Alkaline Salts for Cooking) 碱水 / 鹼水

Formulation:

Could you please weigh and dry mix:

55 grams sodium carbonate (Na2CO3),
35 grams potassium carbonate (K2CO3),  
10 grams sodium biphosphate dodecahydrate (NaHPO3.12H2O)

Instructions:
To use this in cooking, weigh 5 gram of this mixture and dissolve it completely in 3 Tbsp of water.
Use this solution then in 500 gramm or approximately 1 lb. of ingredients listed in your recipe.
