Hathu Curry (Curried Mushrooms)

Ingredients:
  • 100 gm (3 1/3 oz) Mushrooms (sliced)
  • 1 Bell peppers (green) (sliced)
  • 1 Onion (sliced)
  • 1/2 tsp Salt 
  • 1 tsp Curry powder
  • 1/4 tsp Turmeric
  • 1/4 tsp Chile powder
  • 500 ml (~17 fl oz) Oil

Method:
  1. Place the mushrooms, pepper and onion in a bowl and add the salt, curry powder, turmeric and chile powder and mix well
  2. Heat the oil and stir fry the mushroom mixture for 10 minutes
  3. If this curry appears too dry add about 60 ml (2 fl oz) thick coconut milk and simmer, just prior to serving
