Yaki Sake 焼き鮭 (Grilled Salmon)

Ingredients:
  • Fillets of salmon
  • Barbecue Fish Marinade (or any marinade you may prefer)
  • Cedar or Alder grilling planks or tiles.

Method:
  1. Soak the wooden planks in water overnight
  2. Marinade the fish fillets for approximately 30 minutes at room temperature or 2 hours refrigerated.
  3. Pre-heat the grill to 400oF. Place the planks in the gril for three minutes then turn them over for another three minutes. Remove the planks and make sure that the fish is ready to lay on the planks immediately. (The wood may be smoking when you take the planks out but that's part of what you want)
  4. Take the fish from the marinade and lay each piece on a hot plank and immediately return the plank with fish to the grill. The less heat lost from the planks the more immediate is the effect and the better the infusion of the volatile oils and smokiness from the wood into the fish
  5. Cook for approximately 10 minutes.
