Ginger Chicken Soup 姜雞湯

  • 1/2 free range chicken
  • 20g old ginger
  • 150ml black sesame seed oil
  • 100ml rice wine
  • 1 tbsp salt
  • 1 tsp sugar

  1. Wash and clean the chicken, cut into smaller pieces
  2. Wash and cut the ginger into thin slices
  3. Using a low heat, heat up the sesame seed oil in a wok or a deep frying pan
  4. Add the old ginger slices to the oil and fry lightly
  5. Add the chicken pieces and fry on high heat for about 1 minute to brown the chicken
  6. Add the rice wine
  7. When the chicken and wine comes to a boil, add the salt and sugar
  8. Add water if the mixture seems dry
  9. Bring back to a boil, lower heat and simmer for 30 minutes
  10. Remove and serve
