Fish Head with Chopped Chili 剁椒鱼头(duòjiāoyútóu)


  • spotted silver carp head, 
  • 5 red chillies, chopped.
  • 2 Tbsp Hsao Xing cooking wine, 
  • 2 Tbsp chicken essence, 
  • 1 Tbsp fermented black beans, 
  • 2.5 cm (1 in) piece of ginger, 
  • 2 shallots, 
  • salt 
  • garlic.  
  • Cooking oil

  1. Put the fish head in a bowl and coat it with vegetable oil. 
  2. Scatter chopped red chili, ginger, salt, fermented black beans and cooking wine on the fish head. 
  3. Steam fish head  for 8 minutes. 
  4. Add chopped shallots and garlic in the bowl and steam for 1 minute. 
  5. Heat 2 Tbsp oil in a wok  and then pour it on the fish head. (This will cause an immediate sizzling and will glaze the skin of the fish head)
