Banana Blossom and Pork Curry. แกงหมูใส่ปลีกล้วย

  • 200 gm diced pork
  • 1 banana flower
  • Chicken or Pork stock cube
  • 4 dried chillies
  • 4 shallots
  • 3 cloves of garlic
  • Fish sauce
  • Salt
  • MSG (optional)
  • Water.

  1. Pound the chillies with the shallots, garlic and some salt to make a paste.
  2. Remove the outer red sepals from the banana blossom leaving the remainder of the white flower.  Cut the flower longways into four sections then cut each of those into bite size pieces. Immediately place the pieces into salted water to prevent oxidation and browning.
  3. To a pot add a cup of water add the stock cube, add 1 tbsp of Fish sauce and bring to a boil and MSG if required. When boiling add the diced pork meat and curry paste.  
  4. Simmer until the pork is cooked and finally add the cut banana flower pieces.
  5. Simmer the contents for 10 minutes.
  6. Serve over steamed rice.

This dish can be made with chicken meat and is the more common meat for this dish.
