Acharang Mais(Corn Relish)


1 teaspoon salt    
120 ml (1/2 cup) sugar    
120 ml (1/2 cup) apple cider vinegar
1/2 tspn celery seeds
240 ml (1 cup) cooked or canned corn    
1 medium-size onion, diced    
1 medium-size green pepper, diced
2 teaspoons hot pepper sauce    
60 ml (1/4 cup) finely diced pimento    

Stir together salt, sugar, caraway and vinegar in a small saucepan. Bring to the boil. 
Add corn, onion and green pepper and boil for 5 minutes. 
Stir in hot pepper sauce and pimento. 
Refrigerate for a few days to allow the flavours to blend. Serve from cold.
