Vegan Sorbet Cakie Sandwiches

Ingredients: 
  • 6 frozen Cakies
  • pint of vegan sorbet (I used raspberry)
  • 1 cup vegan chocolate chips
Directions:
  1. Microwave the sorbet for about 20 seconds to soften it up and remove Cakies from the freezer.
  2. Using a 2 Tbsp spring loaded scooper, scoop sorbet onto frozen Cakie.
  3. Press the other Cakie onto the sorbet and slowly sandwich together.
  4. Pressing gently, roll the sandwich onto the chocolate chips until covered.
  5. Move the Cakie sandwiches back to the freezer for about 30 minutes to harden up.
  6. I chose to cut the sandwich into pieces to easily pop into your mouth without having to bite into a cold frozen sandwich.  

Recipe for Cakies 

Ingredients:
  • 1 box of cake mix
  • 1 21oz. can of pie filling
  • EnerG Egg Replacer mixed with water for 3 eggs

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix pie filling with half of the cake mix in a large mixing bowl.
  3. Mix egg substitute with remaining half of cake mix in a smaller bowl.
  4. Combine the ingredients, mixing lightly. 
  5. Drop 2 Tbsp scoops of mixture onto baking sheet and bake for 18 minutes.
  6. Allow to cool slightly before moving to cooling rack.
