One part of Latin American soul, one part of Mexican Spice, and one part of New York Attitude, Alex Theil the 35 year old Chef grew up in Vienna, credits his family for first inspiring his love for cooking since he was little. Started working in a professional kitchen with the age of fifteen, trained, traveled and explored a decade in Europe and spend another in America, working for three well-known celebrity chefs which he calls proudly his mentors.

Theil’s Latin adventure has begun: Training the passionate local cooks, sourcing the best products available, working close with local providers, visiting their farms, exploring Mexico, Central- & South America, searching new ingredients and inspirations.


After Sol Kerzner and Edward Steiner decided to have Chef Jean Georges Vongerichten first West Coast opening at One&Only Palmilla, Executive Chef Theil flew back to New York to get to know Jean Georges Vongerichten philosophy by working in his Restaurants. When he returned to his Team in Los Cabos he opened „Market by Jean Georges“in October 2008.


"Jean Georges 3 Michelin stars rewarded food creations are famous for its simplicity but also its remarkable flavor combinations. While working for him in Mexico creating European cuisine with Mexican, Peruvian and Latin American ingredients and following the same philosophy became my passion. Being a member of Jean Georges powerful culinary foundation with over 25 restaurants located in 5 countries, helped me to improve my culinary knowledge and thought me many things beyond cooking“


Chef Alex Theil always wanted to return to Vienna and decided to take a year away from the stove and seek opportunities to showcase all his potential to the Viennese crowd. When he met Klaus Piber who was looking still for a chef for the reopening at one of his former restaurants two visionaries have met. In May 2014 they became Partners and opened Mercado Restaurant in Vienna.
